WEEKLY RECIPES: RED INCA QUINOA SALAD WITH RED PEPPERS AND CHICKEN SAUSAGE


This salad is perfect on a work night when you want to throw something healthy together quickly. I love quinoa and was excited to try the red inca version. 

Ingredients:
1/2 cup cooked quinoa
1 red pepper
1/4 feta cheese
1 serving nitrite- free cooked chicken sausage 
2 tbsp olive oil
2 tsp. vinegar
Dash of turmeric, salt, pepper, oregano

Directions:
Combine all ingredients in large bowel. Serve cool.
